I have been asked four times now for a catalog or brochure for Fifth House.

I have been trying to produce one (intermittently) with the word processing thingy on this computer -- "word office" might be? -- and am having a bit of difficulty, largely because I think I need to see the WHOLE page to know what size something is gonna be, etc. I know it's limited by the size of the screen, thank you. I get pictures overlapped and out of kilter, words where I do NOT want them....

Can someone point me to any books or tutorials that will actually HELP me figure out what I'm trying to do?

Use the zoom function: under the view menu, select zoom, whole page.

Also, if you're making a tri-fold brochure, find page setup on the file menu. Set the margins nice and small (0.5" should do nicely, depending on the capabilities of your printer) and then select the paper source tab. Change the paper from portrait to landscape. Then select OK to close the box. (You may need to adjust your view again, now.)

Under the format menu, find "columns." Set it to three columns and select "equal column width." Then set the space between to twice what you used as a margin, and if you want it, check "line between" as well. Select OK in the box, and you're ready to begin arranging your brochure. Remember to do a front side and a back side, and think about where each column will end up on the finished product once folded before you start inserting graphics and text!

The way that Word works, whenever you scroll, the page renders or re-draws itself, and if you've using a less-than-super-powerful computer, it could look complely messed up, even if it's not. Using full page view, which torakiyoshi suggests above, will work, or you could toggle back and forth between the regular view and Print Preview - the icon that looks like a magnifying glass over a piece of paper, usually located right next to the Print icon in the toolbar. There's setting on the toolbar in Print Preview to see all the pages, or just one, or any percentage you like. When you're done looking, just hit "Close" on the toolbar to go back to your usual page view.
If you're looking for "the easy way" to do brochures in Word, try using a template - there may be some loaded and available under "New" in the menu, or you can go to "help" on the menu & choose "Office on the Web." Once at the Web page, look for "Templates" - they have lots of different templates that can be downloaded free. You may be able to find a design that suits what you're doing, and that way you eliminate the hassle of trying to set up a page.
